Hi, my name is ***** ***** I am at your service to assist with your VW problems. Welcome to Just Answer.
This might be one of the following causing this type of behavior.
Maf sensor:- sensing air flow.
Egr flow :- measuring exhaust gas recirculation. (CO2 sensors)
Fuel flow :- fuel pressure sensor.
These sensors sends signals to the ECM all the time and if they send "out of bound signals" the ECM will cut the engine or go into limp mode to protect the engine from damage.
To find out what is the cause the ECM engine control module will have to be scanned to obtain the fault code/s.
If when you obtain the fault codes them I might be able to assist you more.
