how do i time a vw jetta gt with a 2.0?

If it's out of time you need to replace the timing belt and tensioner. Basically you just remove the covers on the side and pop the distributor cap off. There's marks on the crankshaft and camshaft as indicated in the picture below. Rather than do what they're talking about on the intermediate shaft pulley I just put the new belt on, reinstall the lower timing belt cover and crank pulley and I check that the rotor on the distributor is lined up with the mark there.
