how can I clear all settings and star over?
I really screwed up, trying to use them.
I don't really know where to have the settings just to take normal pictures

Hello, my name is Rusty. On the T3i, go to your tools menu, and select CLEAR SETTINGS and press set. Select CLEAR ALL CAMERA SETTINGS and press set. Select OK and press Set.

To use it simply, set the mode dial to A.

On the Lumix, do the same thing, but don't reset SETUP PARAMETERS when it asks. Set the mode dial to IA for easy shooting.
