Fuji X10. I enjoy using the "Film Simulation" choices; however, there are times when I would like to delete that function for a more "cooler" picture. Can I do that with this camera, and, if so, how do I do it.

I think that what you want is to shoot without histogram alterations in the color balance?

If so - given that your model of camera has such a choice - you ought to either set a default White Balance to shoot with - with all colors equally weighted.

Or, shoot in a mode which disables the Film Simulation choices altogether. (I take it that the 'Normal' or 'Provia/Standard' Film Simulation isn't acceptably neutral.)
