I received a PCN from a company in Liverpool after parking

Hello , I received a PCN from a company in Liverpool after parking in a pay and display car park. I admit that I did overstay the time. The "offence" was on 13 May and I received the PCN dated 10 June but it did not arrive at my home address until 16th June. I was very aware on receipt of the PCN that it looked very amateur in appearance and have since read many things online regarding the same company and found it to be a scam. Obviously i have not responded to it and have since received a demand for payment and threat of court action. What are my options please
