When you get the freezer hovering around -11 degs its usually down to the evaporator blocked up with ice. As you defrost it yourself then you clear the ice but over the next few days it builds up again and gives the same problem.
Now its more then likely the defrost heater at fault. To check this you need to empty the freezer and drop the evaporator housing at the top and there you will see the defrost heater wrapped around the evaporator. Test the heater with a multi meter if you have one and if faulty then it will need to be replaced.
But if the heater is fine then its possibley the thermal cut out that controls the heater which will need to be replaced.
So check them out if you can and see what you find but from what you say it sounds like its a issue on the automatic defrost side in the freezer.
