The problem with defrost changing under acceleration most likely means you have a leaking vacuum line or possibly a normal condition. Ford's default position is defrost if vacuum is lost to the control head. Inspect the vacuum line from the engine to the check valve for a cracked vacuum line. Check that the engine is outputting 18 inches of vacuum at idle. If OK, check for a leaking vacuum reservoir or a leaking vacuum hose from the reservoir to the check valve. If OK, the control head will need to be pulled so that vacuum supply on the Black vacuum hose can be rechecked directly at the control head. So if it goes to defrost immediately when pressing on gas every time then I'd suspect problem, if it takes awhile then it sounds normal like the vacuum reservoir is running out of vacuum. As far as the vehicle not having the power it should it sounds like a clogged fuel filter or failing pump. I'd start by replacing the filter and if that doesn't help do a fuel pressure test, pressures should be around 40-42 psi with pressure regulator unplugged, if not replace the pump. Let me know if you have questions, thanks.
