It's possible that the fuel pump is getting weak. You should test the pressure with a gauge, and if possible test the pump armature with a lab scope. That would be an even more conclusive test.

It runs great until it starts to loose power. I drove it 7 miles before any issues.

there isnt a fuel filter or any ports to check fuel pressure.

I understand. A fuel filter being plugged will cause your problem ALL the time. The fuel pump can intermittently fail though.

Ive had a lot of suggestions, but without an area to hook up a gauge when it happens how can I be sure?

We have to do some testing at some point, and this same problem was in my shop 3 months ago with a bad pump.
