I have a bump out breakfast nook rim joists on foundation WITH CEDAR ABOVE. HOW CAN I POUR AND PROTECT RIM JOISTS FROM CONCRETE AS IT WILL COVER MOST OF THE JOIST ? I REMOVED CEDAR SIDING AND OSB UNDER SIDING TO ABOVE LEVEL OF CONCRETE THAT IS TO BE POURED . HOW DO I PROTECT WOOD JOIST FROM WATER AND ROT IN FUTURE?

Use a pressure treated sill and put flashing outside to direct water away from the wood.
