I have a Rheem 41VRP50N water heater, a couple of months ago

I have a Rheem 41VRP50N water heater, a couple of months ago one of the water connection fittings leaked onto the inside of the tank insulation and onto the electric pilot ignition, I fixed the leak, let it dry, and fired it back up, and its been fine until recently, now it fires back up, heats the water fine, but goes out again and I have to restart, what do you think happened?
JA: Did you double-check the thermostat's settings? And what about the filters?
