How many hours apart should I take Keflex 250 mg and

Ok, so optimally you would want to space it at least 4 hours apart. Since you're only taking the cephalexin twice daily, that is possible (Sometimes cephalexin can be taken up to 4 times daily) so I would have a different answer if that were the case. For you, for example, if you take the mycophenolate at 8am then you can take the cephalexin at 12pm. You can then take the mycophenolate again at 6pm and the cephalexin at 10pm. The reason for the gap is that mycophenolate should generally be taken 12 hours apart, but this way you are separating those two doses by 10 hours and that is sufficient. It seems a little confusing but this would be the best way. As long as the cephalexin is 4 hours from the last dose of mycophenolate and the mycophenolate is at least 10 hours from each other.
