Gallbladder mucoceles are nothing to take chances with. They can rupture and that is a life-threatening situation. They are best treated early, when the dog is not showing any signs of illness. That is the only time Ursodiol has a chance of working. Many vets recommend surgery, rather than trying medication at all. Ursodiol is actually a naturally-occurring hydrophilic bile acid. The supplements you want to use are good supportive care, but they will certainly not cure the problem. Side effects of any kind are unusual with it, but diarrhea is the most common. If you'll send me links to where you read about diabetes being linked to Ursodiol, I would be glad to take a look at them.
If you read the article I linked to above, you'll see that medical management of gallbladder mucoceles is not always successful. In certain breeds, including Shelties and Scottish terriers, surgery is the only recommended treatment. The risk of rupture in those breeds is simply too great.
