Ok

Couple things would cause this.

Most commonly would be the mass air flow sensor. Usually that won't always turn the light on and the truck will have a lot of issues under heavy acceleration. Most often it won't get past about 2500-3000 rpms and then drop right off.

Secondly could be one of the ignition coils failing. Now normally they will turn the light on and sometimes cause a flashing check engine light. Usually that will leave a code stored for a specific cylinder.

If the light is flashing then I would imagine it is a coil and a misfire more then the maf sensor. If you can get a code reader on it, it will tell you which one is failing. This makes sense as well with more moisture in the air. Just like an old wire setup, the spark isn't getting to the spark plug.
