I have a 2004 Infinity G35. Replaced thermostat gasket and radiator cap in June, 2015. Today the gauge is bouncing around from normal to hot and back down to normal. Is it the gauge or could I be overheating?

I doubt it's the gauge. I would try to burp the coolant system again to see if you get any more air out of it. Normally when you do a thermostat, it takes about 1/2 hour to a hour to bleed the air out of the system.
