I have had a trespass notice given to me on alleged theft a week ago and haven't heard anything but the person has gone around and told everyone I've done it, can I have them up for defamation

You can sue for defamation based on this. Claiming someone is a thief is defamatory, and the trespass notice is good evidence. You could start by getting your lawyer to write seeking an apology and retraction, but if they refuse, then you could bring a claim. This would be in the District Court
