changed coolant
fan seems to be blowing fast from moment I turn truck on but doesn't seem to be cooling engine down

how bad did it overheat??? the damage may have been done already. the thermostat may have been the issue but you may have damaged the head gasket
you can do a chemical test to see if any exhaust gases are in the cooling system. you can get the kit at a parts store to run the test.
the other possibility is the radiator may be clogged. you can test the temp of the radiator at the top and bottom to see the difference in temps.

Truck shuts down before it gets that hot I suppose. The truck only over heats under a load and going up hills or driving faster then 50mph while loaded

I would test the coolant for hydrocarbons and definitely check the temps of the radiator.
