What could low MCV, MCH, MCHC mean with high RDW-CV? Had a CBC because feeling tired. FP never mentioned this.

This would typically mean iron deficiency
which lowers MCV et all and raises RDW
The increased RDW means an increase in the variability of red cell size which is also consistent with iron deficiency.

You would have iron studies and a ferritin run as labs which should get to the bottom of this.
