I itching especially at night when I lay down and am not

I itching especially at night when I lay down and am not active. I show no outward rash or bumps.
Is itching at any focal area or is it all over the body? Since when are you having this symptom? Do you have any diagnosed medical condition?

no medical conditions, it is located on my arms. legs and stomach.

I can understand your anxiety.
There are many causes for itching. Generally itching without any associated symptoms like redness or bumps most often is caused by dry skin (xerosis). Dry skin usually results from environmental factors. Having said this I would like to rule out other causes which worry me more. These are liver or kidney disease/ thyroid imbalance/ anemia. You generally feel any symptoms {including pain, itching, extra} more pronounced when you are inactive or at night because your mind is more focused on them at that time.
I would suggest you to have a physical check up along with few investigations like blood tests/ ultrasound of abdomen to clinch the diagnosis. treatment will follow.
Till than have balanced diet, adequate fluid/ cool or wet compress may help/ avoid alcohol, smoking/ stay away from anxiety {yoga, meditation help}.

when I take a shower the water also activates them and I find I scratch more than wash. It is also keeping me awake at night. what can I do to be able to sleep? My girlfriend has/is also itching so that would rule out anxiety.
If I were you I would get it evaluated as itching without rash and not limited to a specific area worries me. Once a diagnosis is reached I would go in for a treatment plan.
Anti allergic tabs {as you already take} should give some relief.

the problem with that is my company was just sold and we now have to wait 90 days to get insurance with our new company.

if it were to be exoma or psoriasis ( sorry about the spelling ) would I see any signs?

Both the conditions will show up with skin changes.
Eczema is a form of dermatitis or inflammation of the epidermis {part of skin}. Psoriasis will present with scales/ patches or dry skin along with itching.

I have neither of those, what do I do to sleep?
I will suggest benadryl/ wet compress to get temporary relief. Short term use of topical anesthetics such as lidocaine or benzocaine/ ointments and lotions such as menthol, camphor or calamine may help.
