If you remove your spouses Apple ID then you will need to delete all of the apps that you downloaded while using it because everytime there is an update on one of those apps, it will require you to enter his information.
If you still wish to remove his Apple ID..
Click on Settings then iTunes and App Store then click on his Apple ID then Sign out
