Windows XP only works on Leopard Boot Camp or earlier. For Mountain Lion you will need to get Windows 7.

Can you tell me whats going to happen if I go back to Snow Leopard, make my partitions using boot camp, install windows XP and then upgrade from Snow Leopard to Mountain Lion ?

Mountain Lion partitioning and supporting frameworks will not support Windows XP.

If you really need XP, then download VirtualBox free, and install a Virtual Machine.

Is VirtualBox stable. Is it the same kind of software as Fusion (not very stable) or different ?

It's the same kind of software. I used it a lot and found it very stable.
