As long as the person has not been declared mentally incompetent by a court and hey are lucid, just because they are on a disability for their mental disorder does not mean necessarily they cannot sign. It would be up to whomever claiming they were not competent to sign to prove that at the time they signed it they were not capable of understanding what they signed. As you can imagine this can be a difficult task, so it would require someone to attest to their state at the time the document was signed.
