Can a Landlord add a Caveat to a Lease in the middle of the term?

Thank you for your question.

No. A lease is a contract. Once signed, it can't be amended unless both parties agree.

They are trying to force me to switch from personal checked to Bank drafts or money orders and making me sign an ammendment agreeing to such. If they force the issue could they be in breach of the original contract and if so what are my options?

You are under no obligation to agree to that amendment during the course of the lease term. Once the lease is up, the parties are free to re-negotiate the terms.
