i am a renter and have an unwanted guest in my home who has lived here for more than 30 days, i see that i have to give written notice to vacate...how long am i legally allowed to make them vacate before beginning eviction process

Virginia requires 30 days written notice. You must specify in the notice the date they are required to leave.
After 30 days have elapsed you can file in the court to have them evicted.
