Sounds like you have a thermostat that is sticking. They are fairly common on your vehicle. Also make sure there are no leaks as I see issues with the small hose connection at the reservior leaking.
The Jag thermostat comes with the gasket that you will need and so does the water pump. You should not need the sensor or any intake gaskets as they are not disturbed during the replacement of the pump or thermostat.
