There are a few different things that this could be. One is exposure to a toxic substance that would irritate the mucous membranes. Another is if she was eating a plant with sharp nettles. Still another, and the most concerning are viral diseases such as Vesicular Stomatitis.

Generally, any time ulcers are present in the mouth, I would recommend having a vet out to examine the animal in person. If this is a virus, steps need to be taken to contain the spread of the disease.

I have never seen a reaction like that to those feed items, though they can predispose horses to gas colic.

Diseases, such as Vesicular Stomatitis, that cause ulcers in the mouth need to be ruled out in cases like this because if they are spread, they could cripple the livestock industry in the US. I think you are doing the right thing.
