Are your bowel movements supposed to break apart when you flush ?

If movements are soft then they will break apart and flush easily. If they are harder, then they won't. How hard or soft depends on how much fluid and fiber is in one's diet. Often if someone is constipated and hasn't defecated in a couple of days the movements will be quite large and hard and will not flush easily.

it is normal and healthy if I have a solid bm that is one long piece like a banana and it breaks apart when I flush?

that's normal for you. So long as you aren't having trouble passing the movement, it is fine.
