Mechanic's Assistant: Have you checked the coolant? Have you noticed any leaking?

Filled up the coolant,,was half a gallon low

temp is reading cold,, dashboard display reads engine hot a/c turned off,, it wasnt on anyway

Okay, thank you for that, the common cause for this type of problem is in most cases caused by a sticking thermostat meaning its stuck open and that causes the gauge to read cold and also cause a false reading for the engine temp sensor. The fix in most cases is to remove and replace the engine thermostat and refill the system. I have enclosed the thermostat replacement steps in the link below as well.
