My name is ***** ***** I am a General Specialist. These are a couple of recipes I like:

Egg Plant Lasagna

  1. Preheat oven to 425 degrees.
  2. Spray cookie sheet, arrange eggplant slices and season with salt and pepper.
  3. Cook slices 5 minutes on each side.
  4. Lower oven temp to 375.
  5. Brown meat, onion and garlic in olive oil for 5 minutes.
  6. Add red pepper and mushrooms, and cook 5 minutes.
  7. Add spinach, tomatoes, tomato sauce, spices and wine and simmer for 5-10 minutes.
  8. Blend ricotta, egg and onion mixture.
  9. Spread 1/3 of meat sauce in bottom of 9” x 13” glass pan.
  10. Layer ½ eggplant slices, ½ ricotta, 1/3 mozzarella and parmesan.
  11. Repeat.
  12. Add last layer of sauce, then mozzarella and parmesan on top.
  13. Cover with foil and bake at 375 degrees for 1 hour.
  14. Remove foil and bake or broil another 5-10 minutes until cheese is browned.
  15. Let it rest 10 minutes before slicing,

Ingredients

  • 1 1⁄2 lbs ground sirloin or 1 1⁄2 lbsturkey Beasrt or 1 1⁄2 lbs Italian Sausage
  • 2 tablespoons olive oil
  • 2onions, chopped
  • 3 cloves chopped garlic
  • 1 red pepper, chopped
  • 1(16 ounce) package sliced mushrooms
  • 1 teaspoon oregano (optional)
  • salt and pepper
  • 1/2 teaspoon white pepper
  • 1 cup red wine or cooking sherry
  • 1 large jar sauce
  • 1(15 ounce) can Tomato diced
  • Cheese Mixture

  • 2cups low fat Ricotta
  • 2 eggs
  • 3 scallons chopped
  • 3 cups shredded Low fat Mozzeralla

1⁄2 cup Parmesean cheese

Egg Plant Parmesean

Use eggwash and Panko bread crumbs to fry the eggplant to golden brown

Spread 2 cups sauce in a 9-by-13-inch baking dish.

Arrange half the eggplant in dish; cover with 2 cups sauce, then 1/2 cup mozzarella.

Repeat with remaining eggplant, sauce, and mozzarella;

sprinkle with remaining 2 tablespoons Parmesan.

Bake until sauce is bubbling and cheese is melted, 15 to 20 minutes.

Those look great. Do you know any recipes without cheese? When I try to cook with eggplant, they either turn out tasteless or too greasy.

There is an eggplant Tomato pie or eggplant relish

Eggplant Relish by Emeril. Serve with Roasted Chicken

In a large saute pan, over medium heat, add 1/4 cup of the olive oil. When the oil is hot, add the eggplant. Season with salt and pepper. Saute until the eggplant is soft, about 15 minutes, stirring occasionally. Remove the eggplant and set aside.
In the same saute pan, over medium heat, add 2 more tablespoons of the oil. Add the onions. Season with salt and pepper. Saute until wilted and lightly golden, about 4 minutes. Remove the onions and set aside. In the same saute pan, over medium heat, add 2 more tablespoons of the oil. Add the celery. Season with salt and pepper. Saute until wilted, about 3 minutes. Remove from the pan and set aside. In the same large saute pan, over medium heat, add the remaining 2 tablespoons of oil. When the oil is hot, add the eggplant, onions, celery, tomatoes, olives, raisins, capers, vinegar, and pine nuts. Season with salt and pepper. Cook for about 15 minutes.

1/2 cup olive oil
1 medium eggplant, peeled and small diced
Salt
Freshly ground black pepper
1 cup small diced onions
1 cup small diced celery
2 cups fresh tomatoes, peeled, seeded and small diced
10 Kalamata olives, pitted and halved
10 Sicilian olives, pitted and halved
1/4 cup white raisins, soaked in water for 20 minutes, drained
1 tablespoon capers
2 tablespoons red wine vinegar
2 tablespoons toasted pine nuts
