why does putting a jar of pickles in the refrigerator increase the crispiness of the pickles?

The cold in the refrigerator causes the water molecules in the pickle to harden some and therefore causes them to be more "crispy."

 

It is warm enough they do not freeze, but the water is cooled down just enough to give the pickles the "snap" and crunch that many people prefer over when the pickle is at room temperature.
