The best way I have found to do this is to keep a notebook near your bed and whenever you wake up at night, immediately write down anything you remember from what you were dreaming.
I think you'll be surprised when you go back and look at your notes... a lot will come back to you.
I didn't make that technique up, BTW... it works for many people.
