Lemon pie and lemonade were great ideas, and I'm glad you were able to do those. In addition, you can make lemon cakes, cupcakes, cookies, which can be frozen successfully for a few months, and you can also give as gifts. Lemon pudding and lemon curd are also good ideas.
You can slice them or cut into wedges and freeze on a cookie sheet, then put into ziploc freezer bags. Also, you can juice many of the lemons and either freeze certain quantities in ziploc freezer bags and/or pour into several ice cube trays so you can defrost as needed for recipes, etc. You can also slice and freeze the rind to 'zest' later, for recipes calling for lemon zest, as it's easier to zest when frozen.
You can also try including some fresh lemons in with holiday gifts for friends, relatives neighbors, so they can make use of them.
