LDS doesn't have every church record. Some may not even exist any longer, having been destroyed in bombing during WWII. You can try civil records if you don't know which parish he was in. Many people were in Boos parish.

The listed facility has civil records from 1798 to 1876.

Once you have the civil details, you can narrow down the church to the correct one.

Alternately you can hire a genealogist in Germany who can seek Catholic records from church to church, as well as checking civil records at the Standesamt (Civil Registry Office) in Koblenz.
