No miss power just lost of smoke no missing p u truck in Colorado high aldatude now in Arizona desert

The truck is not giving us much in way of what to look at. My thoughts are the MAF sensor is reading incorrect and causing the computer to over fuel. Can you monitor the MAF sensor with a scan tool to see if the sensor is reading incorrect.
