I have been given a brace of pheasants and need to pluck them and dress them for the oven today. They have been hanging for the best part of a week. What is the best method for doing this.


After hanging that long, the feathers should come out easily. If they do not, you can very briefly dip them into boiled water to loosen the feathers. I use a pair of needle nose pliers to remove the pin feathers, and any remaining feathers or stubs I eliminate using a propane torch that looks like this:

You can use a cleaver or poultry shears to cut off the heads and the legs at the joint below which there is no meat.

Older versions of Joy of Cooking have illustrated instructions for doing this.
