The best etiquette would be for everyone to be able to go up and choose what they like from the table and then sit down at another table to eat (ladies going up to choose first of course). You said you have around 40 guests going and maybe your house isn't big enough to have everyone sitting down at a table at the one time.
What I suggest you do is have the buffet all spread out on one table. Have the women go in first to choose what they want to eat and have them sit at another table to eat, if this isn't possible then give them small plastic trays so they can take their food back and eat it from where they were originally sitting. The trays can sit on their laps. Once the women have been up to the table, the men follow suit.
The 6 chairs around the table where the buffet is would, in my opinion all be needed to cater for your guests.

Sure. You say you are having around 40 guests. Having 6 chairs at the table where the food is being served is not a good idea as the people sitting eating at them will only be in the way of other guests going up to help themselves to more from the buffet. The chairs would be better being taken away from the table and used for your guests to sit on. I'm sure with having 40 guests at your home, ALL available chairs would be needed.
So put the food in one place, seperate from the guests so they can go in and out to help themselves when they need to. Does this make it any clearerCustomer
