Is it legal for a private school to make an overnight field trip mandatory. If my daughter doesn't attend they will count her absences as unexcused and she will be given detention

To answer directly, as this is a 'private' school rather than a 'public' school, such a school can place whatever conditions they wish on attendance and on what is deemed mandatory and what is not. As such, the school can indeed make an overnight trip mandatory. And yes, if the child cannot provide a reasonable excuse, this can be counted against her. A 'reasonable' excuse may be a disability, for example, which cannot be reasonably accommodated while on this field trip. In that situation the school cannot discriminate or hold this against the student if she cannot reasonably participate.
