He could develop some gastrointestinal upset from eating something new.

If he does develop an upset stomach you can give him 1 1/2 teaspoons of pepto bismol and 1/4 of a 10mg pepcid ac tablet every 12 hours as needed.

He's allergic to chicken. He eats salmon dog food from pet club. Grain free. Maybe some plain bread?

You could cook him some plain salmon and rice or some cooked ground beef with rice.

Bread has wheat and grains in it so that may cause an allergic reaction.
