Hello and welcome to just answer. I have seen the fan relay overheat and fail on these vehicles. Remove the relay and swap it with another like rely (horn, ac clutch,etc) if that corrects the problem, then purchase a new one. Let me know how it goes.

Also, my RPM needle will jump up and go back down while I'm driving, this makes my truck "feel" like its about to stall but doesn't just picks back up to normal. Sometimes it does it repeatedly and others it runs great.

The relay is in that under hood fuse box driver's side.

Regarding the rpm issue, that is most likely a failing TPS (Throttle Position Sensor ). It can get worn out and cause this problem.
