I have a 2002 dodge ram 1500 SLT 5.9. start ok, after warm up and start driving. it sound like the fan kick in high and slow don when I get off the gas

You may be hearing the fan clutch. The fan clutch is what controls the speed of the engine driven fan. When you first start the engine it will be engaged until the fluid redistributes, it will then freewheel and engage as necessary when coolant temperate climbs above normal. You may have an engine temperature issue or a failing fan clutch if it's engaging more than normal.
