VerifiedTheft and Embezzlement are felonies that carry possible jail sentences, but you already know that.
Whether you will do jail time, is entirely dependent on your Judge and Prosecuting attorney. It varies wildy from county to county and even case to case within a particular county.
But the fact that your theft was fairly high dollar as compared to many will put pressure on the court to put you in jail. Having said that, it sounds like you have a fairly sympathetic situation, and have done everything right so far.
Your attorney will certainly ask for probation or some community corrections program, like home detention.
There is no magic thing you can do to avoid jail, no matter how badly you do not want to go.
In my experience, the single most effective thing in these types of cases, is making restitution. Pay back as much as you can. The fact that you already have a job will definately help, as being in jail is not going to help them get thier money back.
