I am asking do we have any rights to the difference from the $1416 that was told we owe a month ago to $2500 today?
They refused to take any payments when we tried to pay.

They need to honor the agreed terms, and may not seek to change terms unilaterally or impose a further amount on you. Where it has wrongly done so, you are entitled to credit for the difference - which may be negotiated, pursued by complaint to the attorney general office, or subject to a lawyer demand letter and eventually civil lawsuit.
