What engine is this? Model number? 6v-53?
How long does it take for unit to overheat? Rapid overheat or take some time? Have you checked the temperature from the oil coolers?
Has anything been changed on the unit? Fan? Water pump?
About 20 minutes to get from 180 to 250. About 5 minutes to cool down to 180. Have ordered a new fan but hasn't come in yet. It has a plastic fan, At idle there is a lot of air coming off the back of the fan but at operating RPM's there seems to be only air coming off the outer perimeter of the fan. The rapid cool down makes me think that we getting water circulation but no air threw the radiator.
Engine? Is the fan original? Blower fan or suction fan? Is fan half way into the fan shroud?
It is the original. The leading edge of the fan seems to be a little thick to me and the back portion of the fan is worn sharp. Its a suction fan. The angle is adjustable. It is half way into the shroud. The shroud is fixed with about 3/4" clearance of the radiator.
how close is fan blade edge to the shroud? Needs to be close to the shroud to collect the air.

you don't think hydraulics are overheating, bring engine temperature up? Gage accurate?

When the new fan comes in I intend to check the angle of the fan blades on the new fan to the angle of the blades of the old fan. After we install the new fan and it still gets hot we intend to install two electric pusher fans on the opposite side and see if that does it. This thing so hard to work on I wanted to get any ideas i can so I don't have to take all this stuff back off again. Its a 8.3 Detroit Yes the fan seems to be turning fine. There is not hydraulic temp gauge now but there will be when get done with it. We have do hydraulic lines rupturing The hydraulic tank does get hot to the touch. Yes. I have a gun here in my home shop.
