I’m sorry to hear this is happening, but rest assured you can recover your account. PS - I can tell you from personal experience of having my FaceBook account hacked, it is not a fun process. First, FaceBook will NEVER ASK YOU TO UPLOAD DOCUMENTS, so this is a huge red flag. Everything will be okay, but please know you need to take several steps, which I will include below. Please take your time to go through each single one and do everything I suggest below. This will not only report the hacked account, but will also allow her to regain access, set it up securely, and so forth. Let's get started.

If the issue is the fact you cannot bypass the account due to not having access to a number or email, the only option available to you is to go over to https://www.facebook.com/hacked and report it as compromised, so they can try and recover it for you. You could also email them at security@facebookmail.com to explain the situation and request them to attempt to recover your account for you.
Also do the following to restore your account:

NOTE: These are the only ways to recover your FaceBook account. For security purposes, those are the only ways to recover a Facebook Account per Facebook policy.

Also, as for preventing it in the future, a minimum of a 12 character password ***** Capital letters, lowercase letters, numbers and symbols is recommended. I would also recommend using two-factor authentication, which I will include the instructions for that below also. Furthermore, Facebook also has it set up so you can see all of the devices logged into your account and allows you to log them off; I will also include how to do this at the bottom.
Reset Your Password
To reset your password ***** you're not logged in to Facebook:
Go to the Find Your Account Page.
Type the email, mobile phone number, full name or username associated with your account, then click Search.
Follow the on-screen instructions.
For security reasons, you won’t be able to use the same mobile phone number that you use for two-factor authentication to help you reset your password. You’ll need to have a different mobile phone number or email address added to your account to reset your password ***** you ever need to.

To recover an old account:
Go to the profile of the account you'd like to recover.
Click below the cover photo.
Select Find Support or Report Profile.
Choose Something Else, then click Next.
Click Recover this account and follow the steps.
Also, once you get back in, setup Two-Factor Authentication, check the Devices Logged In, and setup Trusted Contacts to secure your account....and of course reset the password to something really strong with Capital letters, lower case letters, numbers and special characters.
Two-Factor Authentication
Click in the top right of Facebook. Select Settings & Privacy > Settings. Click Security and Login. Under the Two-Factor Authentication section, click Use two-factor authentication. You may need to re-enter your password. From there you can set things up to receive second factor codes via SMS or, preferably, using a code-generating app like Google Authenticator.

Devices logged in
Facebook has a few options to help keep on top of who's accessing your account, and where. Under Settings > Security and Login, you can see all the devices your account is logged in on, and where they are. See something you don't recognize, or a device you've lost track of? The right-hand icon gives you the option of logging out remotely, or reporting it as an imposter.
From there, scroll down to Get alerts about unrecognized logins, and turn it on. That way, you'll get a notification via Messenger, email, or Facebook that someone has logged into your account from an unrecognized browser.
If you no longer have access to neither the email address nor the mobile number which is linked to your Facebook account, then your trusted friends might be another option.
Go to the Facebook homepage and click on “Forgotten account”:
Type your email address, phone number or full account name and hit “Search” to identify your account.
On the next page, click on “I no longer have access to these” to continue.
Enter your new email address or phone number. Confirm and hit on “Continue”.
In the next step you need to click on “Reveal My Trusted Contacts” and then send a link with a code to your list of trusted friends.
Get the recovery code from trusted friends. Use this code to access your account.
