For removing the tiles, it's easy but annoying to do: you'll have to right-click on each tile and choose "Unpin from start" it will be removed forever.

For getting your old taskbar back, can you plz provide me with more info about how it looks now and what would you prefer it to be?

If you're using only the touch method, you'll have to long-press on each tile instead of right-clicking.
