I am sending text messages via I Message, but they are showing that they are coming from an EMAIL address I don't want them to come from. How do I turn off that's Email address and add another for the purpose of sending IMESSAGES

Go to iMessage settings via Settings -> iMessage -> Send & Receive.You can see your primary phone number listed in grey with 1 or more email address below. If any phone number has check mark next to it, click the phone number and it will remove the check mark from the listed email address.Let me know how you make out with this solution.

What do you mean? You should want to send text through your phone number. Your Apple ID is registered in iMessage so you can message from other devices like a iMac or iPad.
