Are all the ac air controls working fine?
The noise from behind the glove box is from eithe the defrost/ passenger air temp ot mode door actuator. They are installed close to each other. The issue with the blower only working at high speed points towards a faulty blower motor resistor.
The complete dash does not have to come apart. The instrument panel carrier will need to be removed to get access to the HVAC housin where these actuators are installed. At that time you can touch the actuator and check which one is knocking.
Only other way is by using a compatible scan tool to command the actuators one by one and check which one is the culprit.

Ok. Unfortunatelu on that model dash will need to be removed. It calls for approx 5 hours of labor.

For the noise one of the door actuators. Need to get access to the HVAC housing by removing dash to determine which one is faulty. In my experience i will recommend to replace all three as all three have same age on them. The actuators are not very expensive the labor is. If you only change one and another one goes out then you will be paying for the same labor again.
And for the blower speed issue, i will recommend to check the blower motor resistor.
