I would be testing this for exhaust back pressure, using a gauge made for the purpose. If the catalytic converter is clogged up, you'll have exactly this issue. You can probably borrow the gauge at Autozone or other parts stores. It attaches in place of the oxygen sensor. Go out and drive it with the gauge attached, replicate the issue, and see what the gauge says. You should have no more than 1psi of back pressure, if the gauge shoots way up when you're losing power, then your exhaust is clogged and needs to be repaired.
