I'm sorry to hear about your cat.

These cases can be extremely frustrating for the vet and owners. It can be quite difficult to come up with a diagnosis. When I see a middle aged to older cat with weight loss, changes in appetite, GI signs and normal bloodwork, I'll start to think about IBD (inflammatory bowel disease) or Lymphoma. These are both very possible here and they will usually have normal bloodwork and organ function.

The only way to get a diagnosis, is to get biopsy samples of the intestine. This can be done surgically or via endoscopy. Some don't want to get the biopsies and they just treat with steroids as it can help either way. If it's cancer, then it's not going to cure it- it can potentially put it into remission for a bit. If it's IBD, then it can manage it long term and hopefully eventually get off steroids.

I would recommend seeing an internal medicine specialist and going over the biopsy options to see if you can nail down a diagnosis.

Here is some info on the two conditions:

I hope this helps, let me know if you have any other questions.
