what makes the exhaust pop and crackle on a dodge or any truck for that matter?

For the most part the crackle noise that you hear is caused by the expansion and contraction of dissimilar metals or different mass of metals heating and or cooling! When you turn your truck off, the metal of the exhaust manifold will cool much faster than that of the cylinder head, the contact point of each bolts that retain the exhaust manifold to the cylinder head will allow an ever so slight amount of movement at each bolt, the same thing happens when it is heating up as well, you just will not hear it as much over the running engine
