It's not about proving your relationship. To the contrary, they are afraid that because she has you in Canada and they don't see much back home that she will not go back home if she comes to Canada.
She must show strong ties to home or they will not let her visit.
She should show a job, a family that depends on her, membership in clubs and community organizations, if she does volunteer work she should prove it. Assets are important to but that's not enough.
And for sure if she gets the visa she should have proof of all of this and a return ticket when she comes to Canada as they can still turn her away at the border.

So is just simpler to wait until we are married and apply under the spousal visa then? And I would have to marry her in China obviously as well.

It's possible to have her come to visit but you just have to prepare for it properly in the sense of understanding what you need to prove.
You can marry her where you like but if she cannot come to Canada then Canada won't be an option. There may be other places to marry her if you don't want to marry her in China though.

Her circumstances will not change however in China from what we originally stated. So I don't know how then a person could get her to visit here. If we marry, why would she then not be allowed to come to Canada with me? I know if we marry in another country, including China that we would then at least have the right to appeal any decision if she was refused entry to canada.

She may not be allowed in until the application for permanent residency status is approved.
It can take up to a year these days unfortunately.
You are correct about the appeal. If she applies from within Canada there is not right to appeal.
I know her circumstances will not change but if you can think of ways to show she has ties back home based on what she does with her life then it may work if you try again,.
